Covered cooking and service area

Live cooking needs to sit under solid cover: an interior social room, a roofed terrace, a lanai or a tent approved for that location. On an exposed oceanfront deck, coastal wind is the usual reason a station has to be repositioned on the day, so pick the sheltered side when you have the choice.

Venue-approved safe power

Confirm with the building or estate what power is available at the station position and whether house rules allow it to be used for catering equipment. The station's actual requirements are stated in the proposal rather than assumed on site, and generators typically need separate approval.

Load-in path

Map the route from the approved stopping point on A1A to the station: gate or front-desk clearance, service entrance, elevator reservation window, door widths, thresholds and the real walking distance. A long or restricted path affects setup timing and should be flagged before the event date.

Guest queue and flow

Leave room for guests to line up without blocking the bar, the elevator lobby, walkways, restrooms or the dance floor. In a narrow club room, plan the approach from one side and the exit from the other so the line keeps moving.

Service window

The package includes two hours of live-chef service. Fix the start time against the run of show and against any end time in the building's house rules, so the station is not opened during a toast or a program block. Confirm any change to that window in writing.
