Live cooking needs to sit under solid cover: a roof, a lanai, a covered terrace, an amenity room, or a tent approved for that location. On rooftops and open decks, also check wind exposure at the intended position. Uncovered turf or open deck is the most common reason a station has to be repositioned on the day.
Confirm with the venue or building engineer what power is available at the station position and whether it may be used for catering equipment. The station's actual power requirements are stated in the proposal rather than assumed on site, and generators may trigger additional review at public parks and at many condo properties.
Map the route from the unloading point to the station: loading dock or service entrance, freight elevator dimensions and reservation window, garage clearance height, gate widths, stairs, curbs and total distance. High-rise and gated properties often set vendor access hours and their own documentation requirements, so ask building management before the date is locked.
Leave room for guests to line up without blocking bar access, walkways, restrooms, elevator lobbies or the dance floor. For larger counts, plan the approach from one side and the exit from the other so the line keeps moving.
The package includes two hours of live-chef service. Fix the start time against the run of show so the station is not opened during toasts or a program block, and confirm any change to that window in writing.
