Pasta selection

Choose three pasta varieties. Familiar shapes or filled pasta can be considered depending on the menu direction and what is available when you book.

Sauce selection

Choose three sauces and spread them out so the station reads differently from one end to the other, typically one lighter and one creamier direction if those options are available for your date.

Proteins and dietary needs

Two protein selections are included. Vegetarian, vegan and allergy-related requirements should be raised during selection so they can be reviewed and confirmed in the proposal.

Site logistics

What a live station needs on site

These are the details that decide whether the station runs smoothly, and most of them are also the details the City's site plan and your venue will ask about. Review them early, then confirm them in the written proposal.

Covered service and cooking area

Live cooking needs to sit under solid cover — a roof, a lanai, a covered terrace or a tent approved for the location — with working room behind the buffet line as well as in front of it. Open turf with no cover is the most common reason a station has to be repositioned on the day.

Venue-approved safe power

Confirm with the venue what power is available at the intended station position and whether it may be used for catering equipment. The actual power requirement for your setup is stated in the proposal rather than assumed on site, and a generator used instead belongs on the site plan and may trigger additional City review.

Load-in path

Map the route from the unloading point to the station position: gate widths, elevator access, stairs, curbs, grass runs and total distance. Hotel and banquet venues in the airport corridor often have set vendor entrances and load-in hours, so ask for those in writing.

Guest queue and flow

Leave room for guests to line up without blocking bar access, walkways, restrooms, emergency access or the dance floor. For larger counts, plan the approach from one side and the exit from the other so the line keeps moving while plates are finished.

Service timing

The package includes two hours of live-chef service. Fix the start time against the run of show so the station is not opened during toasts or a program block, and confirm any change to that window in writing before the event date.

Venue approval

Some venues restrict onsite cooking, open flame, equipment placement or vendor load-in hours regardless of what the City approves. Get written confirmation from the venue that a live cooking station is permitted in the intended position.

Weather fallback
