Three choices shape the whole station

Selections are made conditionally against what is available for your date and confirmed in writing before the event.

Pasta selection

Choose three pasta varieties. Familiar shapes or filled pasta can be considered depending on the menu direction and what is available when you book.

Sauce selection

Choose three sauces and spread them out, typically one lighter and one creamier direction if those options are available for your date, so the line reads differently from one end to the other.

Proteins and dietary needs

Two protein selections are included. Vegetarian, vegan and allergy-related requirements should be raised while selections are being made so they can be reviewed and confirmed in the proposal.

City approvals, park rentals and the questions to settle first

A live cooking station raises different questions than a plated caterer: cooking on site, a possible tent, power and an outside vendor working during the event. In North Miami the answers depend on whether you are on private property or on City property, so settle them before the date rather than after.

Events on City of North Miami property

  • Organized events on City property, including park and facility rentals, go through the City's community event application process.
  • The City's application asks the organizer for a certificate of general liability insurance with a minimum combined single limit of $1,000,000.
  • A separate tent permit is called for on tents larger than 10 by 10 — directly relevant when the pasta station needs a covered cooking area outdoors.
  • The application also states that any event at a City facility running after 11:00 p.m. will require police, which can affect a late service window for the station.

Parks, pavilions and community centers

These are the details that decide whether the station runs smoothly on the day. Review them with your venue early, then confirm them in the written proposal.

Covered cooking and service area

The cooking and service area needs solid cover — a roof, a lanai, a covered terrace, an amenity room, or a tent approved for the location. Open turf or an uncovered pool deck is the most common reason a station has to be repositioned on the day.

Safe, venue-approved power

Confirm with the venue what power exists at the intended station position and whether it may be used for catering equipment. The station's actual power requirements are stated in the proposal rather than assumed on site, and a generator at a City park or facility can trigger additional review.

Load-in path

Map the route from the unloading point to the station: gate widths, service elevators, stairs, curbs, grass runs, dock access and total distance. Condo and amenity buildings around the Biscayne Landing corridor often set vendor load-in hours, so flag them before the event date.

Guest queue and flow

Leave room for guests to line up without blocking bar access, walkways, restrooms or the dance floor. For larger counts, plan the approach from one side and the exit from the other so the line keeps moving.

Service timing

The package includes two hours of live-chef service. Fix the start time against the run of show so the station is not opened during toasts, a program block or a photo set, and confirm any change to that window in writing.

Venue approval

Some venues and buildings restrict onsite cooking, equipment placement, open flame or outside vendors. Get written confirmation from the venue, the HOA or the City that a live cooking station is permitted in the intended position.

Weather fallback

Miami-Dade heat and afternoon storms are a planning input, not a surprise. Identify an indoor or covered alternate position for the station in advance, and agree who makes the call to move it and by what time.
