A City facility, a County park, a State park, a condo association and a private home each answer to a different set of rules, and live cooking is usually the detail that triggers the extra question. Sorting this out early tends to decide your date more than your menu does. City events and food-service licensing

  • Events held on City of North Miami Beach property generally require a Special Event Permit through the City. Requirements and lead times depend on the event, so ask before the date is announced.

Site logistics

What a live pasta station needs on site

These are the details that decide whether the station runs smoothly, and most of them belong to the venue rather than the menu. Walk them with your venue early, then confirm them in the written proposal.

Covered cooking and service area

Live cooking needs to sit under solid cover — a roof, a lanai, a covered terrace, a clubhouse interior or a tent approved for the location — with enough clear floor for the buffet run and the chef's working side. Open turf with no cover is the most common reason a station has to be repositioned on the day.

Safe, venue-approved power

Confirm with the venue what power is available at the intended station position and whether it may be used for catering equipment. The station's actual power requirements are stated in your proposal rather than assumed on site, and generators bring their own review at City, County and State park locations.

Load-in path

Map the route from the unloading point to the station: garage clearance, loading dock or service-elevator access and hours, gate widths, stairs, curbs, grass runs and total distance. In condo buildings the service elevator is often reserved separately, so flag a long or restricted path well before the event date.

Guest queue and flow

Leave room for guests to line up without blocking bar access, walkways, restrooms or the dance floor. In a party room or clubhouse, plan the approach from one side and the exit from the other so the line keeps moving instead of doubling back on itself.

Service window

The package includes two hours of live-chef service. Fix the start time against the run of show so the station is not opened during toasts or a program block, and confirm any change to that window in writing.

Venue approval

Some venues and associations restrict onsite cooking, open flame, equipment placement or vendor load-in hours, and many require insurance documentation from outside caterers. Get written confirmation that a live cooking station is permitted in the intended position.
