Pasta selection

Choose three pasta varieties. Familiar shapes or filled pasta can be considered depending on the menu direction and what is available when you book.

Sauce selection

Choose three sauces and balance them so the station reads differently from one end to the other, typically one lighter and one creamier direction if those options are available for your date.

Proteins and dietary needs

Two protein selections are included. Vegetarian, vegan and allergy-related requirements should be raised during selection so they can be reviewed and confirmed in the proposal.

Parkland planning

Permits, pavilions and the questions to settle first

Two things usually decide a Parkland date before the menu does: whether the City's special-event permit applies to your setup, and, if you are outdoors on City property, how pavilion reservations work. Both run on the City's timeline rather than yours, so start them early and treat the points below as a checklist to verify — not as a substitute for the City's current rules.

Special-event permits

  • The City of Parkland requires a special-event permit for any organized activity or event that impacts City services, or that involves the use of or has an impact on public or private property, public facilities, sidewalks, medians or street areas.
  • Applications are handled through the City's special events function within Parks and Recreation and are reviewed on a first-come, first-served basis.
  • A refundable security deposit is required no later than 14 days before the event date.
  • Mobile food vendors carry their own City requirements, and appearing on an approved vendor list does not replace them.
  • A pasta station is a live cooking station, so describe it to the City that way — chef-attended cooking equipment on a buffet line, not a drop-off tray delivery — and confirm your specific event, property type and cooking setup directly with the City.

City of Parkland special events permit information

Pine Trails Park and the City's rentable pavilions

  • Pavilions are available at Pine Trails Park, Terramar Park, Liberty Park and the Equestrian Center at Temple Park.
  • Only Parkland residents may reserve a pavilion. Reservations are required on weekends and City holidays, and during the week for groups larger than ten.
  • Reservations run in four-hour blocks, from 9:00 AM to 1:00 PM or 2:00 PM to 6:00 PM, with up to two parties per day. The included two hours of live-chef service have to sit inside that block along with station setup and breakdown, which is the single most common scheduling squeeze at a pavilion event.
  • Posted capacities are modest — Pine Trails Park pavilions 1 to 3 are listed at 30 people — so the 25-guest minimum can sit close to the limit at the smaller shelters, before you add the space the station and its queue occupy.
  • Confirm with the City whether bringing in an outside cooking vendor also triggers special-event review.

Site logistics

What a live station needs on site

These details decide whether the station runs smoothly, and in Parkland most of them are answered by a community manager, a clubhouse coordinator or the City rather than by you. Review them early, then confirm them in the written proposal.

Covered cooking and service area

Live cooking needs to sit under solid cover — a clubhouse room, a lanai, a covered terrace, a pavilion roof or a tent approved for the location — with the service line and finishing toppings under the same cover. Open turf with no cover is the most common reason a station has to be repositioned on the day.

Venue-approved power

Confirm with the venue, the clubhouse or the City what power exists at the intended station position and whether it may be used for catering equipment. The station's actual power requirements are stated in your proposal rather than assumed on site, and generators typically trigger additional review at City parks and in many gated communities.

Load-in path

Map the route from the unloading point to the station: gate access and guard-house procedure, gate widths, elevators, stairs, curbs, grass runs and total distance. In gated communities a vendor list or gate clearance is often needed in advance, and a long or restricted path affects setup timing.

Guest queue and flow

Leave room for guests to line up without blocking the bar, walkways, restrooms or the dance floor. In a pavilion or a clubhouse room the queue is the constraint, not the table — plan the approach from one side and the exit from the other so the line keeps moving.

Service timing

The package includes two hours of live-chef service. Fix the start against the run of show so the station is not opened during toasts or a program block, and if you are in a four-hour pavilion block, work backwards from the end time to leave setup and breakdown inside the reservation. Any change to the window is confirmed in writing.

Venue and HOA approval

Clubhouses, community rooms and private venues frequently restrict onsite cooking, open flame, equipment placement, vendor insurance or load-in hours. Get written confirmation from the venue or the HOA that a live cooking station is permitted in the intended position before the layout is finalized.

Weather fallback

South Florida heat and afternoon storms are a planning input, not a surprise. Identify an indoor or covered alternate position for the station in advance, and agree who makes the call to move it and by what time.
