Covered service and cooking area
The cooking position needs solid cover overhead: a roof, a lanai, a covered terrace, a clubhouse patio or a canopy approved for that location. Open turf with nothing above it is the most common reason a station has to be moved once the crew arrives.
Venue-approved power
Ask the venue what power exists at the intended station position and whether catering equipment may be plugged into it. We state the station's actual power requirements in the proposal rather than assuming them on site, and a generator can trigger a separate permit or park review in Sunrise.
Load-in path
Trace the route from the unloading point to the station: gate widths, elevator access, stairs, curbs, grass runs, service corridors and distance. Business-park and county-park sites often restrict vehicle access hours, so flag a long or gated path before the date.
Guest queue and flow
Leave room for a line that does not cut across the bar, walkways, restrooms or the dance floor. For larger counts, plan the approach from one side and the exit from the other so plates keep leaving the station.
Service timing
The package includes two hours of live-chef service. Set the start time against the run of show so the station does not open during toasts, a speech block or a program segment, and put any change to that window in writing.
Venue approval
Clubhouses, hotels and banquet rooms may restrict onsite cooking, open flame, equipment placement or vendor load-in hours, and outside-caterer rules vary by property. Get written confirmation that a live cooking station is allowed in the position you intend to use.
Weather fallback
South Florida heat and afternoon storms are a planning input, not a surprise. Identify an indoor or covered alternate position for the station, and agree in advance who makes the call to move it and by what time.
